- Pan Fried Swai Fish Fillets: This is a very mild fish similar to catfish. Fry the fish in a little coconut oil with garlic and salt/pepper. Serve with a green salad and brocoli.
- Grilled Chicken Salad: Prepare a big leafy salad with your choice of greens. Marinate some thinly sliced chicken breast in fresh lime juice, coconut oil, garlic, cayenne pepper, and salt for a few hours and cook on the grill. Through in some quinoa or cooked lentils for some low glycemic carbs.
