Researchers in South Korea have discovered fungal fighting properties within the skin of pumpkins. During their studies they isolated a protein from the rind called Pr-2. This protein has been effective in killing Candida albicans, which is the most common cause of human infection.
Most people eat pumpkins by scrapping the flesh off of the skin, but now we should rethink the way we consume them. I guess as with most vegetables the same holds true with pumpkin, most of the nutrients and benefits are found in the skin.
Researchers are working on making a new medication from this protein found in pumpkin skins, but why wait for that? If you are prone to Candida overgrowth why not start eatingĀ pumpkin, skin and all.
