Candida Free Recipe: Grilled Halibut

With summer in full force in the northern hemisphere those on a candida eliminating diet may wonder what candida friendly meals can be cooked on the grill. Here’s a great recipe that incorporates many of the Candida friendly herbs and foods to make a tasty summer dish.

Ingredients

  • 4 (6-ounce) halibut fillets
  • 1 bunch green onions (about 10 onions), trimmed
  • Virgin Coconut Oil
  • 1/4 teaspoon blackĀ  pepper
  • 1/8 teaspoon salt
  • 3 diced tomatoes
  • 1 avocado, peeled and diced
  • 4 lime wedges
  • 1/2 cup cilantro (coriander)
  • Cayenne pepper to taste
  • 1 cup quinoa
  • 1 clove fresh garlic
  • 3 tablespoons of virgin olive oil

Directions

  1. Dice and combine combine tomatoes, avocado, 1/4 cup cilantro, cayenne pepper in a small bowl.
  2. Prepare quinoa according to directions and then add finely minced garlic and remaining cilantro.
  3. Coat fillets and onions with coconut oil. Sprinkle fish evenly with pepper and salt. Place fish and onions on grill rack coated with coconut oil; cover and grill fish 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Grill onions 3 minutes on each side or until charred and tender.
  4. Cut grilled onions into 1-inch pieces. Place grilled fish on a bed of quinoa on the serving plate. Top with tomato mixture; sprinkle with grilled onions. Squeeze 1 lime wedge over each serving.

Makes 4 servings (serving size: 1 fillet, 1/2 cup tomato topping, and about 1/4 cup onions, 1/2 cup quinoa)

Now you have an easy fresh recipe that’s not only Candida diet friendly, but one the whole family will enjoy as well. Note that the photo shows white bread, but I have replaced the bread with quinoa in the recipe.

    The information I have read says to get the virgin oil for the health benefits they claim.

    Yes virgin coconut oil is recommended and has the best flavor. :-)
