Beans, Beans, Beans, they are such a great food source for those on a Candida diet. They contain protein and low GI carbs that will energize your body but won’t feed those hungry Candida albicans cells.
This recipe comes courtesy of Yeast Infection No More, which is a highly effective Candida diet program that tells you everything you need to know to get healthy. Linda Allen, the creator of the program, sent me this recipe to share with you.
Easy Bean Salad
- 1 cup kidney beans — dry
- 1 cup lima beans — dry
- 1 cup pinto beans — dry
- 1 cup garbanzo beans — dry
- 1 cup green beans
- 1 red onion — chopped
- 3 tablespoons fresh chopped parsley
- freshly ground black pepper — to taste
- 1/3 cup virgin olive oil
- 3/4 cup apple cider vinegar
- 1 teaspoon dry mustard
- 3 cloves garlic — minced
- 2 teaspoons oregano
Soak all dry beans overnight in water to cover. Rinse and place in a large pot and fill with water to cover. Cook for 1 hour until done, then turn heat off and add green beans. Let sit in the hot water for 30 minutes. Drain. Mix in the onion, parsley, pepper and vinaigrette. Refrigerate overnight.
This is a great recipe and one that will be perfect for your end of summer labor day celebrations or for the beginning of the summer season if you live down under. This will be a nice addition to your Candida Diet and will help you get the nutrients your body needs. Linda advocates the use of apple cider vinegar and I’m still a bit leery of that ingredient. I would say in moderation it is probably fine for most people.
