Candida Free Recipe: Fiesta Chuck Roast

This recipe is a sample of the type of delicious Candida friendly recipes that are found in Yeast Free Cooking’s slow cooker bonus recipe book. This one is perfect for people with busy lives, but need to follow a Candida eliminating diet.

Prep Time: 10 minutes
Cooking Time: 4-6 hours

Ingredients

  • 4-5 pound organic, natural chuck roast (preferably grass fed)
  • 1 small onion chopped
  • 1 tsp ground cumin
  • 1 clove garlic, minced
  • 12 – 16 ounce jar of “no-vinegar” organic salsa

Directions

Put a 4-5 pound chuck roast in the slow cooker. Sprinkle it with salt and pepper. Add 1 Tb. Onion Powder or the small onion, 1 tsp. cumin, and 1 clove of garlic. Pour the salsa over the top and cook on high for 4-6 hours until the roast is falling apart.

Serve over broken organic tortilla chips – soup style. Or, serve on a bed of lettuce with a few broken tortilla chips thrown in for crunch. Sooo good! I also topped mine with a big dollop of fresh guacamole. You could also add in some frozen corn, black beans, or any other Mexican type
veggie during the last 30 minutes.

    Some of your info regarding dieting is confusing. I have found an article here where avocado is not recommended and then recommended on other recipe. Same on this above one, plus beans and tortilla chips. So?

    Avocado is only to be avoided in extreme cases, for most it is fine. Avocado is a great food source and it’s benefits far out weigh the rare chance that the sugar contained in it will feed Candida. You also have to remember that most things you eat is converted to sugar during the digestive process, in fact your body is fueled by sugar. Black beans are fine and a few organic corn chips also are acceptable for most people.
